Energy resilience has become a key criterion when choosing professional kitchen equipment. We examine the technical solutions, compensation programs and global trends likely to influence procurement for Ukrainian foodservice businesses in the 2026\/27 season.<\/span><\/em><\/p>\n

Three years ago, performance and price were the main criteria when selecting professional equipment. Today, a third and often decisive question has joined them: what happens to the machine if voltage drops to 170 volts and then returns with a surge? This criterion has already changed both the structure of demand and the arguments that work in procurement discussions.<\/span><\/i><\/p>\n

The market did not collapse – it adapted<\/b><\/h2>\n

Claims of a total collapse in Ukraine\u2019s foodservice sector are not supported by the available figures. Industry estimates put the number of foodservice establishments above 45,000 and the annual HoReCa market close to UAH 120 billion, with annual growth of 12\u201315% in hryvnia terms. Delivery accounts for up to a quarter of total revenue, chains are growing faster than independent venues, and operators continue to struggle primarily with staff shortages and rising wages.<\/span><\/p>\n

The property market is also revealing. Social media discussions focused heavily on closures after the difficult winter outages, but real estate data paints a more nuanced picture. In spring, demand for leasing caf\u00e9 and restaurant premises in Kyiv was 40% higher than demand for purchasing them, while the number of commercial rental listings increased by 16% between January and April. The operating model is changing as well: entrepreneurs are avoiding long-term capital commitments and choosing flexibility through shorter leases, smaller premises and equipment that can be moved to another location.<\/span><\/p>\n

For equipment suppliers, this marks a clear shift. Operators are buying less of a \u201cdream kitchen for the next ten years\u201d and more of a package that can pay back faster and relocate with the business if necessary.<\/span><\/p>\n

Winter is no longer force majeure – it is a design constraint<\/b><\/h2>\n

Blackout preparation is gradually moving from emergency response to standard engineering practice. Operators inventory their electrical loads, determine what genuinely needs to remain on generator power, and redistribute equipment between locations so that available capacity continues to generate revenue.<\/span><\/p>\n

In practical order of importance, this has several implications for equipment selection.<\/span><\/p>\n

Starting current matters more than rated power.<\/b> A venue that sizes its generator only by adding up equipment nameplate ratings is likely to get the calculation wrong. Motors in dough mixers, meat grinders and bowl cutters, as well as refrigeration compressors, draw several times their rated power at start-up. Equipment with soft-start systems or inverter drives costs more, but it may allow the business to use a smaller generator. The capital savings can outweigh the premium paid for the machine.<\/span><\/p>\n

Mechanical controls are more resilient than electronics.<\/b> A planetary mixer or dough mixer with mechanical controls will generally tolerate voltage fluctuations better than a machine with a touchscreen and control board. In wartime conditions, a damaged board means not only the price of the part but also the wait for delivery. Simple controls, a reliable drive and readily available spare parts have therefore become direct commercial advantages.<\/span><\/p>\n

Thermal equipment is the main power consumer.<\/b> Ukrainian practice diverges from the global trend here. Worldwide, operators are moving from gas to induction because of its speed, precision and energy efficiency. Yet induction is entirely dependent on electricity. A hybrid setup is therefore rational in Ukraine: part of the thermal block remains on natural gas or LPG as an emergency circuit, while induction delivers peak productivity when stable grid power is available.<\/span><\/p>\n

Protection costs less than repairs.<\/b> Voltage stabilizers, surge protection devices and a dedicated line for refrigeration are often the first items cut from an installation budget. They are then paid for again through repairs and downtime.<\/span><\/p>\n

Funding: compensation programs many buyers still overlook<\/b><\/h2>\n

The financial landscape has shifted alongside the technical one. In 2026, the Ukrainian government allocated more than UAH 5.6 billion to support domestic manufacturers. The following measures relate directly to machinery and equipment procurement:<\/span><\/p>\n

    \n
  • UAH 1.8 billion for partial reimbursement of 25% of the cost of agricultural machinery and equipment for approximately 5,000 farmers and food producers;<\/span><\/li>\n
  • UAH 475 million to partially reimburse businesses and municipal enterprises for the cost of Ukrainian industrial machinery and equipment;<\/span><\/li>\n
  • UAH 220 million to fund the construction of vegetable and fruit storage facilities. Under the updated rules, support is available for new facilities with a capacity of at least 500 tonnes. Maximum grants are tied to capacity: up to UAH 4 million for 500 tonnes, UAH 7 million for 1,500 tonnes, UAH 10 million for 3,000 tonnes and UAH 20 million for 6,000 tonnes. The standard contribution is up to 30% of project cost and can reach 50% for eligible businesses in frontline territories. Project costs may include technological equipment, delivery and commissioning.<\/span><\/li>\n<\/ul>\n

    A separate mechanism is available to small businesses. Group 2 and Group 3 sole proprietors in socially important sectors, including foodservice, may receive a one-off payment of UAH 7,500 to UAH 15,000 depending on employee count. Funds may be spent on generators, batteries, solar panels, fuel or electricity bills.<\/span><\/p>\n

    The amounts available to small businesses are modest, but the principle is consistent: the state is co-financing autonomy and modernization. A supplier that can help a buyer identify the applicable program and required documents has a meaningful advantage over a competitor offering comparable equipment, even at a lower price.<\/span><\/p>\n

    Raw-material pressure: why equipment utilization may be uneven<\/b><\/h2>\n

    In March 2026, Ukraine\u2019s raw milk production fell to 496,200 tonnes, down 10.7% year on year. For processors, this means tougher competition for raw materials, higher input costs and stronger interest in equipment that reduces waste through accurate portioning, vacuum packaging and yield control.<\/span><\/p>\n

    This is where the Ukrainian context aligns with the global market. The key story is not the \u201crobot chef\u201d but the data layer: systems that measure actual product yield, portion sizes and waste. Automation that saves raw materials has a predictable payback; automation for its own sake does not.<\/span><\/p>\n

    What is happening globally – and what applies to Ukraine<\/b><\/h2>\n

    Three global developments should be considered when shaping an equipment portfolio.<\/span><\/p>\n

    Ventless equipment.<\/b> According to internal data from one US distributor, demand for ventless ovens has risen by approximately 15% since late 2025. Growth is driven by express formats and dark kitchens where installing extraction ductwork is impossible or disproportionately expensive. The trend is especially relevant to Ukraine, where businesses often relocate and lease smaller premises without pre-installed ventilation.<\/span><\/p>\n

    Robotics: a more realistic view.<\/b> The Robotics Center of Silicon Valley estimates that the global restaurant robotics market reached approximately USD 1.8 billion, growing 61% year on year. Yet full kitchen automation for venues with diverse menus remained commercially non-viable in 2026. The deployments that work are focused on a single repetitive, high-volume station with a layout optimized for the robot. For Ukraine, the practical opportunity lies in targeted automation of dough dividing, portioning, fry stations and other standardized operations.<\/span><\/p>\n

    Manufacturer consolidation.<\/b> Middleby completed a strategic restructuring: on 6 July 2026, it spun off its food processing business as Midera, after previously selling a 51% stake in its Residential Kitchen business through a joint venture with 26North. Middleby has since focused on professional commercial foodservice equipment. The broader market is growing from USD 42.7 billion in 2026 to a projected USD 76.9 billion by 2036, a compound annual growth rate of around 6.1%. At the same time, tariffs and inflation continue to pressure manufacturers and ultimately feed into distributor price lists.<\/span><\/p>\n

    1. Calculate the load profile, not only total power: what must run continuously, what can stop for two hours and what can remain offline for a day.<\/span><\/li>\n
    2. Check the starting current of key machines before selecting a generator, not after.<\/span><\/li>\n
    3. For mechanical equipment, prioritize simple controls and spare-parts availability.<\/span><\/li>\n
    4. Include power protection as a separate line in the installation budget.<\/span><\/li>\n
    5. Check whether the purchase qualifies for an active support program: 25% reimbursement for food producers, compensation for Ukrainian equipment or grants for new storage facilities.<\/span><\/li>\n
    6. Evaluate automation using one criterion: how much raw material and labor time it saves at a specific station.<\/span><\/li>\n<\/ol>\n
